Enjoying life, as we travel, be it on a cruise, flight, or a car trip. So much to see, and so little time remaining. Every day is a gift to be thankful for. Still, much more to see and do, as we continue the march.

Enjoying my full retirement from the USMC,(20 yrs),and the Department of Agriculture(22yrs) as a Federal Meat & Poultry Inspector. I conducted anti, and post mortem inspections on all red meat species, that are sold in commerce. I have also been tasked with inspecting equine(horses) for export to France. Inspected poultry, and red meat in slaughter plants, and processing plants, from Maine to Virginia. Worked with Veterinarians on pathology dispositions of all species of red meat, and poultry. Conducted Pre-operational, and operational inspections of facilities, and plant personnel. Had to ensure product ingredient formulations were being adhered to. Restaurants, and supermarkets were not under our control. Only Federally regulated establishments were inspected, by the field Inspectors. We were considered the "Police Force", for the meat, and poultry industry. Consumer protection was our ultimate responsibility, and goal.
Marine Corps Base Camp Smedley D. Butler (or Butler Marine Base to natives) is a United States Marine Corps base located in the Japanese prefecture of Okinawa. It was named for legendary Marine Smedley D. Butler.
Camp Smedley D. Butler is actually a collection of facilities and satellite installations spread throughout Okinawa. Camp Smedley D. Butler was formerly called Camp or Fort Buckner, named for Army General Simon Bolivar Buckner, Jr., who commanded ground forces in the invasion of Okinawa and was killed in the last days of the battle. The renaming of Buckner to Butler occurred after most US Army troops left Okinawa, and the base was transferred to the USMC.

Best Moment Served on the Western Pacific Mess Mgt. Team. We had an assignment to go to Hawaii for 54 days.I had my Wife Amy fly into Honolulu. I requested to live off base, and got an approval. My Wife and I lived in a hotel together for about forty days. This was a great tour.
Worst Moment I applied for Housing, requesting an accompanied tour of duty on Okinawa. I was denied due to the very limited billets for the USMC personnel. Amy, and I were very dissapointed.
Chain of Command Food Serv. Officers were, Capt. Sousa, and Capt. Rittenour.Food Tech. was MGySgt. Griffin. Our team Officer was Capt.Al Mcgrath, and his replacement was WO2 Ray Dumas.
Other Memories As a member of the West Pac Food Team, we had to teach, and demonstrate the exact food service science. One day while assigned to the Camp Smith dining facility on Oahu Hawaii, the team made approx. 150 gallons of fruited geletin. Being in Hawaii where fresh pineapple is available, we substituted pineapple, for the amount of fruit the recipe called for. When supper time came, we still had liquid. The geletin did not gel. We later determined that the acid in the pineapple, deactivated the gelling agent. We were very embarassed to say the least.
